Coconut Crusted Cod
Almond butter & fish 🐟 ? ! ? ! Something you’ll learn very quickly about me is my OBSESSION with almond butter. I often use it to marinade my chicken, but tonight COD 🎣
INGREDIENTS 1 cup slivered almonds 1/2 cup unsweetened coconut shreds 1/2 t salt 1/8 t cayenne pepper 1/4 t freshly cracked pepper 1/4 cup Beckah's Bangin' Butter almond butter (coconut blend) Zest & juice of one lime Four 6-ounce cod filets
-Preheat your oven to 425° F. -In a food processor, whirl together the coconut, almonds, a bit of lime zest, black pepper and cayenne pepper for about 10 – 15 seconds. •Pour in a dish and set aside. -Whisk together Bangin’ Almond Butter and lime juice. Set aside. -Take the cod, dry it a bit with a paper towel and sprinkle with salt. -Cover the cod filets in the almond butter and crust all sides with the coconut almond mixture and place in a sprayed baking dish. -Bake for about 12 - 15 minutes. The topping should be crispy and browned. The fish should be opaque and lightly flake with a fork. -Enjoy alongside some greens and roasted potatoes with a sprits of lime juice and cayenne!
