There is a kid in me that misses the careless enjoyment of diving into candy bars without a second thought. Peanut butter cups were one of my favorites. But I now that I want to keep my diet CLEAN, I make my own treats that are wholesome. This nutty snack not only fuels my body... but I am free to carelessly indulge, satisfying that inner-kiddo's craving.
Ingredients:
3/4 cup of Beckah's Bangin' Butter
2 tablespoons coconut oil, melted
2 tablespoons cocoa powder, unsweetened
2 tablespoons of maple syrup (or sweetener of choice)
1/4 cup raspberry jam (or DIY it up with some raspberries + little touch of water on the stove top!)
1/2 cup chopped almonds
Directions:
1. Line a muffin tin with paper liners. In a small bowl, stir together the Beckah's Bangin' Butter, cocoa powder, maple syrup & coconut oil until combined.
2. Divide half the mixture evenly among the 12 muffin cups, then freeze for 15 minutes.
3. Spoon a teaspoon of jam in the middle of each BBB layer.
4. Top with the remaining BBB mixture, sprinkle chopped almonds, then freeze until solid, another 25 minutes.
Note: I heard added some espresso powder PUMPS UP that chocolate flavor! I am totally giving this a shot my next round! It may help with that afternoon work fade.
